I would like to share a recipe from The Kid – Friendly ADHD & Autism Cookbook. I have used this recipe several times and will be using it in reviews of a couple of kitchen items soon. The batter is thin, but I found that if you pour it onto a hot skillet slowly, you will get thicker pancakes. My family really loves these, I hope you do too. I have done a review of this cookbook already, and you can read it by clicking on this link.
Low-Carb, No-Sugar Pancakes
2 1 cup liquid (water, rice milk, or juice)
1 tablespoon oil
1 teaspoon vanilla
1 cup GF flour mixture (almond, buck-wheat, and rice or millet)
1 teaspoon baking powder
Combine the wet ingredients. In a separate bowl, combine the dry ingredients. Add the dry mixtures to the wet mixture. Blend thoroughly. Batter should be thin. Cook on heated skillet, flipping once.
This recipe can be found on page 156 and there are variations of the recipe listed, too. You can purchase the Kid-Friendly ADHD & Autsim Cookbook at Amazon.com
